How to Set Up Cooking Zones on the Grill

If you’re grilling more than one type of food, you can use your grill’s three cooking zones to keep them separated.

Place hot charcoal briquets on top of fire grate. Burn for 10 minutes, then spread briquets over half of fire grate. Leave other half empty and set cooking grid in place.

Brush meat with oil and place meat onto cooking grid above empty portion of grill, allowing room between meat and heating element.

Cover grill and cook until browned, 3–5 minutes per side. Move meat to heated part of grill and cook, turning occasionally, until desired doneness is reached, 3–15 minutes more depending on thickness of steak.
